Tuna rainbow salad
Rich in nutrients and a nice change from sandwiches, our tuna rainbow salad is easy for kids to help make, too, getting them excited for lunchtime.

What you'll need
- Half a 160g can of tuna in spring water
- 1 slice of pepper
- 2 spring onions
- 3cm piece of cucumber
- 1 heaped tbsp of canned mixed beans in water
- Juice of half a lemon
- 3 tsp olive oil
- Large pinch of dried mixed herbs
- Large pinch of mustard powder
- Large pinch of black pepper
Method
You can double up the ingredients for a couple of days of lunches. Serve with a thick slice of wholemeal bread with a lower-fat spread. Finish off the lunchbox with a piece of fruit, a slice of malt loaf and no sugar drink.
Step 1.
Wash and chop the spring onions and cucumber. Wash the pepper and cut off a thick slice, then chop it into small pieces.

Drain the mixed beans and tuna.
Step 2.
Mix the mixed herbs, black pepper, mustard powder, oil and lemon juice in a bowl. Stir thoroughly.
Step 3.
Add the vegetables, beans and tuna to the oil mix. Stir thoroughly and make sure the veg and tuna are coated.
Step 4.
Assemble in a lunchbox and chill.
