
Never fail chocolate cake
This gorgeously gooey fudgey chocolate cake was sent in by Miriam for our Homecooked with Love competition. The cake is Miriam's mum's recipe and was a centrepiece to birthdays and any kind of celebration and is now passed down through the family.
- 400g sugar
- 115g cocoa powder
- 2 tsp baking soda
- 320g plain flour
- 1 tsp salt
- 2 eggs
- 0.5 cup vegetable oil
- 120ml hot water
- 245g natural yoghurt
- 120ml milk
- 2 tsp vanilla essence
- For the icing sugar: 113g butter
- 50g cocoa powder
- 60ml milk
- 375g icing sugar
- 1tsp vanilla essence
Grease and line 2 round sandwich tins. Preheat the oven to 180°C/160°C fan/gas mark 4
Mix together sugar, 115g cocoa powder, baking soda, flour and salt in a large bowl.
Crack the eggs into a separate bowl and beat.

Add the beaten eggs, vegetable oil, hot water, yoghurt, 120ml milk and 2 tsps vanilla essence to the sugar and cocoa mix.

Mix together until well incorporated, folding all the ingredients together until you have a runny gooey mix.Â
Pour the mixture into the tins and bake for 35 minutes.

To check if the cake is done, stick a clean knife or cocktail stick into the centre of the cake. If it comes out clean or with only a few crumbs on, your cake is done.
To make the icing, mix together the butter, icing sugar, remaining cocoa powder, milk and vanilla essence until you get a slightly runny consistency.

If you over or underdo it, balance it out with a little more milk or icing sugar.
Take the cake out of the oven and let it cool down.

Once the cake is cool, decorate it with icing and tuck in!Â
