£10 Challenge

Mimi’s challenge involved preparing a tasty meal for her and her friends at home for just £10!

Perhaps the hardest challenge of all, Mimi was set with the task of preparing a beat-the-budget meal for herself and 3 friends for a spend of just £10! Find out what ingredients Mimi picked up when she visited her local Nisa store and what yummy veggie recipe she created for everyone to share.

What you'll need
  • Large bunch of spring onions, washed and thinly sliced
  • 1 courgette, sliced in diagonal strips
  • 1 carrot, peeled and sliced in diagonal strips
  • 250g egg noodles
  • 12 veggie gyozas
  • 1 x packet Blue Dragon chow mein sauce
  • 60g prawn crackers
  • Cupboard Essentials:
  • 4 tbsp vegetable oil
  • Salt
  • Pepper
  • Optional chilli flakes
Method
Step 1 Mimi’s Beat-the-Budget
£10 Challenge Step 1

Add around 4 tbsp of vegetable oil to a non-stick frying pan over a medium heat. Reserve a handful of the greener end of the spring onion for garnish and add the rest into the pan. Season with salt and pepper and gently fry for 5 minutes.

Step 2

Remove half of the onions/oil and place in a bowl. Add the courgette and carrot into the pan and stir to coat in the spring onion oil. Fry for around 6 minutes. During this time, cook your gyozas and noodles according to packet instructions. Once cooked, transfer the noodles into the pan with the vegetables.

Plate up the gyozas, crispy side up (this will help retain the crispiness!) and drizzle the reserved spring onion oil over the top of them.

Step 4

Add the chow mein sauce to the noodles and toss to combine (adding a splash of boiling water to loosen if necessary). Top with the fresh spring onion that we reserved in step one and add a sprinkle of optional chilli flakes for added heat.

Serve with an optional side of prawn crackers and dig in!
