Vanilla ice cream sandwich

- 1L vanilla ice cream, slightly softened
- 115g butter
- 100g granulated white sugar
- 70g flour
- 30g cocoa powder
- 1 egg
- 1 tbsp vanilla extract
- A pinch of salt
Preheat the oven to 180c/160 fan/gas mark 4.

Line a rimmed baking sheet with baking paper.
Add the butter to a small saucepan and melt over a low heat.
Take a large bowl, and whisk the melted butter with the sugar. Then, whisk in the egg and vanilla extract, followed by the flour, cocoa powder and salt. Stir until the mixture is smooth.
Spread this mixture into the lined tray and bake for around 10 minutes, turning around half-way through to cook evenly.

Place on a rack to cool.
Cut the cake in half with a serrated knife, crosswise. Spread the softened ice cream across the top of one half. Smooth with a spatula before adding the other half of the cake to top it off.
Wrap in plastic and freeze until firm. Then, cut into appropriate sizes with a serrated knife.
